i put the name in quotes because i'm not entirely sure what to call this cake. i made it in china for my brother and in china 99% of the population doesn't have an oven. so there were many obstacles in the way of this cake: ingredient buying confusion, all of the substitutions i made to make, an oven with four different settings that made no sense.
but i posted it because it did taste really good. and think of how nice it would be if i had normal cake pans and i didn't have to buy whole coconuts and smash them on the ground to get the flakes for the frosting.
